Hoarr Late Night Dinner Post - Spinach Enchiladas (stuffed with spinach, chopped mushrooms and diced tomatoes; topped with a light sour cream sauce) served with handmade guacamole and canned black beans
We ended up finishing a project a full week early at work, so we’re having a mini-potluck tomorrow to celebrate. I decided to try something that I’ve been wanting to try out for a while — spinach enchiladas with flour tortillas.
They turned out great, but I didn’t care too much for the sour cream sauce. I like my enchilada sauces to be heavier, and this recipe I found didn’t cut it. I also cut up seven large avocados and made a shit-ton of guacamole for tomorrow.
I’m such a nice guy.
